Chocolate Brownies (Can be easily veganified)!

These are delicious, simple, and can easily be made vegan. I was making these for some non-vegan friends but next time I try them I’ll see how they come out with vegan substitutes! We all ate four each. Obesity is coming for us.

Simple Chocolate Brownies

185g dark chocolate – turns out Sainsbury’s basics is vegan!
185g unsalted butter (I buy dairy free spread and it works equally well)
85g self raising flower
40g cocoa powder or drinking chocolate
3 eggs (or aquafaba/vegan egg substitute)
275g caster sugar
200g milk and white chocolate, chopped. If vegan, substitute for dark chocolate and nuts or bits of vegan biscuit, such as oreo!

  • Preheat the oven to 175c (fan oven). Melt the butter/spread and chocolate together in the microwave, stirring in between 10 second bursts until smooth. Set aside.
  • In a different bowl, crack the eggs (or mix egg substitute), add the sugar, and whisk until doubled in size. It’ll be pale yellow and mousse like.
  • Add the chocolate and butter/spread mix and stir. Then sift the flours and cocoa together into the bowl and mix again, but don’t overmix. Chop both types of chocolate and stir into the mix.
  • Pour into a greased and lined rectangular cake tin – approximately 19x26cm – and put in the oven for 25-30 mins.
  • Enjoy!
